Chris Barratt’s recipe for upside down almond and apple cake: Maximal style…

In just under a year and a half after moving to London from Birmingham Chris ‘The Captain’ Barratt, or Delia as I like to call him, has achieved more than most! At just the tender aged of 23 he has played all over the world, manages some of the biggest djs on the planet at one of the most prestigious agencies in the industry and co-promotes one of London’s most exciting new house club brands, Maximal. We caught up with the main man in question as he prepares for their biggest event so far at The Key featuring the mighty Switch.



Hello everyone at Harderfaster, hope everything is going well in rave land! This is my favourite cake recipe for those lonely winter nights whiling away the hours listening to The Archers on the radio or post party shindigs. Shaaazam!

Right here’s the coup… make sure you follow these strict instructions. Otherwise the trunks will be coming down!


Ingredients

For the cake mix:

110g/4oz butter
110g/4oz soft brown sugar
110g/4oz self-raising flour
1 tsp baking powder
55g/2oz flaked almonds
2 eggs, beaten
For the base
30g/1oz butter
30g/1oz soft brown sugar
½ lemon, juice only
2 apples, peeled, cored and quartered



Method

1. Preheat the oven to maximum 290C/400F/Gas 6.
2. For the cake mix, cream together the butter and sugar in a large maxing bowl.
3. Gradually add the flour and the baking powder, maxed well, as you do.
4. Stir in the flaked almonds, then gradually add the beaten eggs, to form a cake batter.
5. For the base, heat the butter in a medium non-stick, oven-proof frying pan, over a medium heat.
6. When the butter begins to melt, add the sugar, and allow to begin to caramelise, then add the lemon juice.
7. Add the quartered apple wedges to the pan, tossing well, to thoroughly coat them in the caramel, and continue heating through for two minutes.
8. Pour the cake batter over the top of the apples, then place the pan into the hot oven, to cook for 10-12 minutes, or until golden.

Right well thanks for that! Now that’s over with let me get down to some questions!

Ahoy there Captain well first things first, how are you my son!?

I’m really good cheers mate, really busy but absolutely fucking loving life!

Apart from your wonderful cake baking skills, we’re here to talk about your new club night you co promote. How did this all come about?

Yeah it’s basically something I’ve been wanting to do for a while now. We were at the Serious birthday bash getting absolutely nailed, stealing vodka from behind the bar and basically just causing complete mischief and in a drunken mess we decided that we should throw our own parties just for a laugh to be honest! Maybe you don’t remember…?

About a month later The key offered us a Friday night but we only had 2 weeks to promote it. We jumped at the chance: all we wanted to do was throw some awesome parties with fucking outstanding music, at a wicked venue with a great crowd.

The last one at The Key was rocking from start till finish, this one will be no exception! The very best underground music you will hear in London, I guarantee!!

For those who haven’t been to a Maximal event give them a helping hand and describe the night in 4 words!

It’s your third event already in just two months and you’ve got another planned for Boxing Day. What’s the plans for 2007?

We’ve got big plans mate! We’ve got some massive exclusive bookings coming to The Key. All will be revealed very soon, Boxing Day is going to be amazing! Watch this space…

On your first night you managed to pull 800 people without any advertising at all — how did that happen? And more importantly, why?

We kinda got fed up of having to give the hard sell to the punters. We just wanted to put together a strong line-up in the main room and work with some of our favourite club brands and just throw a party. We didn’t print one flyer, one web banner, or anything it was just through word of mouth…everyone knew it would be a rocking party and the word just spread, we really were amazed at the great turn out and we f*cking smashed the club to pieces!!

Your next event is on Friday 24th alongside Strictly Left. You’ve managed to bag the mighty Switch for the main room — who else are you looking forward to seeing?

Yea Switch is wicked, I can’t wait for his set! My other main man on the night will be Mr Donaghy, this boy knows his stuff!

Sounds naughty… but what can we expect from you on the night?

The very best in all things underground from minimal, techno, prog… and the way back to Maximal. We’ll be having it on the dance floor and all over the shop — look out!



You’ve recently moved agencies from Serious to Dex-Ray. Tell us a little about your agency and who you look after?

Yeah I have indeed. I still look after Umek, Valentino Kanzyani and R&D, but will be working with some of the bad ass Swedish boys, Angello, Ingrosso and Axwell, which will be a good crack!!

You’ve had some big international gigs this year — which have you enjoyed the most?

I’ve done some wicked gigs in China that were awesome, they were definitely a highlight! But I’m playing for Colours NYE which in my opinion is one of the best promotions in the UK. I’m also playing the after party which sounds like it’s going to be very interesting!!
